Our Good Friday Feast….

It’s Good Friday, and that means fish….. I’m not quite sure of the traditions to be honest, but I’m quite happy to follow this one given that I love fish and I have time to prepare this lovely treat.  The zucchini and corn fritters are something I”ve made previously.  The only thing I’ve done differently is add in some mashed potato as a binding agent.  It did make them cook quicker and the flavour a little more solid and dense, but it suited the fish which is why I did it.

So take one part zucchini fritters, add a smoked trout, some basil pesto mayo and voila….feast part one.  Next add these yummy cheese and spinach triangles and feast is complete.

For the basil pesto mayonnaise, mix 1 tsp pesto with 2 table sp. mayonnaise.

and serve with a lovely strong Riesling to complete the meal.
