Do you love lemons? Have a bit of a sweet tooth? Like having something for desert, particularly as the cooler winter months start? I think this pudding might be perfect for you!
Tart and sweet at the same time, as the pudding cooks the lemon citrus smell will fill your kitchen with that lovely sweet goodness of baking making your mouth water with the aroma. Balance out the flavor with a touch of double cream and you have a delicious pudding perfect for a dinner party or even just to treat yourselves during the week.

Lemon Delicious Pudding – serves 8
- 2 lemons
- 60g butter
- 1 1/2 cups castor sugar
- 3 eggs, separated
- 3 tbl sp self raising flour
- 1 1/2 cup milk
preheat your oven to 180c and butter a 1L ovenproof basin or serving dish. Zest 1 lemon and juice both. In a food processor cream your butter with the lemon zest and sugar and then add the egg yolks. Add the flour and milk alternately to make a smooth batter. Stir through the lemon juice until smooth. In another bowl whisk your egg whites until creamy and firm. Fold gently into the batter and then pour into the buttered basin. Stand this basin inside a baking dish half filled with hot water to create a bath. Bake for approx 1 hour. Allow to cool a little before serving. Serve with double cream.
