Well this recipe is impressive, to say the least. When it was shared with me on Facebook and keenly pronounces NO FLOUR, NO OIL, NO WHITE SUGAR… and technically no dairy to boot…. well I’m intrigued, excited and a little nervous about what the outcome will be. The verdict? YUM….let me think about it some more… Yep, definitely Amazeballs! It’s not quite guilt free, but given its ingredients I’m pretty happy to report it as being on the better end of the treat scale.
It is important that you use real peanut butter that you would normally buy from a health food store. Commercial grade peanut butter will be too oily and won’t work for the texture or consistency you are aiming for.
Peanut Butter & Chocolate Chip Cookie Dough Bites
makes approx 2 doz
- 1 can chickpeas, drained, well-rinsed and patted dry
- 2 tsp vanilla extract
- 150g natural peanut butter
- 80g honey
- 1 tsp baking powder
- 1/2 cup dark choc chips
- pinch salt
Pre-heat your oven to 170c. Combine all your ingredients into a food processor apart from the chocolate chips. Process until very smooth. If, like me, you don’t have one then a stick mixer works just as well. I just pureed the ingredients minus the peanut butter and choc chips and then stirred both ingredients in together at the end.
Place teaspoon sized bites onto a baking tray and bake in the oven for approx 10 mins or until they are golden brown. They will be soft when you take them from the oven and keep the dough like texture in the middle.
Cool & serve. Just try to keep these babies in your house for more than one day, although they are reported to keep for a few days in an airtight container.
