Wedding Cupcakes

One of my gorgeous friends got married in Adelaide on the weekend.  It was so much fun to head to my old hometown to catch up with everyone and be a part of her special day.   One of the things that I loved most about it is that friends and family all pitched in to make the day happen, manning the bar, doing the brides makeup and making the food, including the wedding cake.  There is something about this collaborative effort that adds to the love in the room and the celebration that follows.  Which leads me to the cupcakes…. Remember the monkey cake of a few weeks ago?  Well I think we should maybe start the Leah and Sonia show, because yet again we were at it, with Sonia making 50 cupcakes decorated in a variety of styles, to be a part of the wedding dessert buffet.  This time it was me assisting the chief baker and learning a little bit more about decoration in the process.

Even though I wasn’t a part of the baking process, I do still have one small recipe to share with you all as a part of this post.  A diary free marshmellow style topping that is sure to have your taste buds singing as you bite into your little cupcake treat.

Marshmellow Cupcake Topping

  • 3 egg whites
  • 1 cup castor sugar
  • 1/2 cup water

Place the water and sugar into a heavy based pan over a low heat and stir until the sugar is dissolved.   At this point turn up the heat and boil the sugar syrup (DO NOT STIR) for about 5 minutes, or until it begins to form a thick syrup.  Once it thickens, remove from the heat to prevent it colouring and starting to caramalise.  Allow to sit until the bubbles disappear.

In another bowl beat your egg whites until soft peaks.  Slowly pour in the warm sugar syrup into the egg whilst keeping the beaters going.  This will require a machine of some kind.  Continue to beat for approx 10 minutes.  The mixture will be ready when it has cooled and the mixture has thickened into a stiff peak.

Spoon onto your cupcakes and decorate as you please.
