BBQ Salad Series: Rocket & Parmesan

2This is one of those simple salads that might seem obvious, but is a classic every day of the week for me.  There is so many variations of what you can do with   I often use the flavour combination with some fresh tomato sliced up and toss through warm pasta for a quick meal.

All you need to put this salad together is some fresh rocket (arugula), a really good parmesan cheese, a good quality olive oil and some balsamic vinegar.

To this you could add:

  • fresh slices of pear
  • fresh figs
  • pinenuts
  • blue cheese and walnuts instead of parmesan

Rocket & Shaved Parmesan Cheese Salad

  • 3-4 handfuls of rocket
  • approx 1/3 cup shaved parmesan cheese
  • approx 1 tbl sp balsamic vinegar
  • approx 2 tbl sp olive oil

Shave your parmesan cheese using a vegetable peeler for quick and even shavings.  Wash your leaves and spin dry.  Place both the cheese and leaves in a bowl and then lightly drizzle the olive oil and balsamic vinegar across the salad.  Serve fresh.

Mix to order and be prepared for people to come back for seconds.
