Creamy Tofu Mayo

Okay, so I was more curious about this one than anything which is what prompted me to try it.  I wasn’t sure that I would like it, but if it is healthier than eating normal mayo then really it couldn’t be a bad thing.  The end result?  Not bad actually, it’s light and not oily or over sweet like most commercial mayonnaises .  You can taste the tofu, but if you don’t mind that then the flavours are really quite good and I would honestly be quite happy to have this as a healty substitute in my diet.  Super simple to make, it takes less than 5 minutes and you’ve got enough to keep going in the fridge for a week or so.

Creamy Tofu Mayonnaise

from Donna Hay’s Fresh & Light

  • 300g silken tofu
  • 1 tsp dijon mustard
  • 1 tbl sp. white vinegar
  • salt and pepper to taste

Creamy Tofu Mayonnaise

Place all ingredients into a bowl and puree with a stick blender, or alternatively use a blender.  Keep in the fridge for up to a week in a sealed container.   Serve when you would normally use mayonnaise.  Makes 11/2 cups.
