This wasn’t orginally on the list of recipes to attempt from this book but with finals season for the football happening and us both wanting a little treat they seemed like the perfect thing to create, and boy where they yummy! Ridiculously simple there is no excuse really not to give them a try.
- approx 4-5 medium sized starchy potatoes
- approx 2-3 tsp rosemary, go fresh if you can for added flavour
- 2 tbl sp vegetable/canola oil
- salt to taste
Peel and cut your potatoes into fine strips.
Dry them on paper towel and then toss in a bowl with some salt, the rosemary and oil.
Lay out on non-stick baking paper on a baking tray and place in a 200c oven.
Bake for approx 20 minutes and then turn over and cook for another 10 minutes or until golden and crispy. Serve hot with a dash more salt if required.
