Ginger Nut Biscuits

Believe it or not, I’ve had a post sitting here for almost half a year half written to make traditional ginger nut biscuits.  Unfortunately I’m still yet to make them (it will happen I promise), but in the meanwhile I thought I would share this beautiful and simple recipe that I found on Wholefood Simply when I discovered the delicious Coconut Rough.  This is another healthy gem with no wheat, no egg, no dairy and so so simple to make.  No excuses for buying premade treats when you start reading some of the recipes on the site.

This time around I have adapted the recipe slightly to suit what I had to hand in the pantry.  I do need to mention that this particular recipe really does need a food processor.  I was fortunate enough to be housesitting when I made these beauties so I had access to one which made the job a whole lot easier, particularly with the nuts.  I’d have to admit I’m not sure you could make this recipe without one.

So back to the flavours at hand….lemon (my twist), the bite of ginger, the nuttiness of macadamia’s and the creamy sweetness of dates….sounds pretty good huh?
