Next time you are contemplating a simple salad I would highly recommend breaking out the green beans. Their texture is satisfying to eat, and coupled with some almonds and a light red wine vinegar this simple salad will delight your taste buds.
Simply top and tail your beans. Blanch them in boiling salted water for approx 2 minutes, or until they turn bright green. Refresh them by running cold water over the beans to stop them cooking and then drain.
Add some almonds, preferably flaked almonds that you have toasted and dress with a splash of red wine vinegar and a slurp of good olive oil. Season with salt and serve.
