Potatoes are an absolute favourite in our household. The preference is for them to be roasted, but we will eat them any way we can get them.
This recipe was inspired originally by Jamie Oliver and his roast lemon and rosemary roast chicken recipe. I then got some visual inspiration from the beautiful photos of roast potatoes from Simple Provisions and Brown Paper Belle.
These were super simple to make and tasty enough they were being pinched off the baking dish by more than one potato lover before they had even made it to the table. The secret is in the double cooking to get the crispy edges. If that is not enough the smell of fresh rosemary baking will have your house filled with delicious smells and your neighbours knocking on your door wanting to know what time to be over for dinner.

Gorgeous!! I’ve never tried lemon with potatoes, although I made GARLIC and rosemary roasties. I shall have to try this version next 🙂
