I’ve been experimenting a little bit with dried fruit and no bake treats these past few weeks and this is one creation that I thought was worth sharing. To begin with they didn’t look like they were going to work, the flavour was too tart and citric for even the bitter loving palates. A bit more experimenting with a few cooks in the action and we had something worth sharing with you all. The magic of chocolate came to the rescue and the sweetness of the white chocolate turned these beautiful balls into something worth feasting on. With only enough chocolate for half the batch I had every intention of covering the remainder in dark chocolate. And then to my surprise the balls kept getting better with age as the flavours mellow so I ended up leaving them as they are. Our other very wonderful surprise was discovering that they go really well with a glass of red wine!
From a cooking perspective I loved that these are a one bowl mix up, don’t require really much of your time to create and can be adapted to what you have in your cupboard. Plus as our summer kicks into full gear here in Brisbane not putting on the oven is an added bonus. Whilst there is a touch of sugar and of course the white chocolate these are actually pretty healthy little bites of goodness if you’re trying to watch what you eat.
So here’s to some useful recipes using leftovers from the festive season, to hot weather friendly treats and being able to create two different treats for the labour of one for sharing at this busy time of year.
