Grownup Lime Cordial

Yum!  Honestly its the best way to describe this delicious and easy to make cordial.  It is another of our family recipes that has been passed down from my Nan.  Check out the original story here on Please Pass The Recipe but for now I thought I would share this because it is simple to make, great as a refreshing drink with soda water on ice and would make a fabulous base recipe for some future cocktails that might be making an appearance here later on in the year when we get our act together.

Grownup Lime Cordial

  • 12 limes, use both the zest and juice
  • 750g sugar
  • 300ml boiling water
  • 15g citric acid

Zest your limes and then juice them.

Combine the boiling water and sugar together and stir until the sugar is fully dissolved.   If you are struggling to get this to happen then place in a saucepan over a low heat and allow to warm only until the liquid is clear and then remove immediately.  Too much heating will result in it caramalising and you want a sugar syrup.
Once the syrup is cool, add the zest, juice and citric acid and mix well.  Pour your cordial into a sterilised jar and keep refrigerated ideally.  This mixture will make approximately 1.5L.

  3. To make simple syrup, just boil together sugar and water. In equal amounts. As soon as the sugar dissolves, turn off the heat. Cool the mixture.

    I loved having this drink when I was Down Under! Different than the one my cousins made for me, but I’m sure just as refreshing and delish!
