I may be overstating the obvious for anyone in Brisbane at the moment, but this summer is HOT! 35 celsius and 90% humidity has me melting around the edges and very grateful for air-conditioning. The last thing I feel like doing is heating up the kitchen (and myself) when it takes so much effort and expense to try to keep it cool. As a consequence salads are king in our household right now… very quickly backed up by the barbeque when we require some kind of cooking.
I’m a firm believer that many salads can act as meals and believe that anyone crying that you can’t make friends with salad just hasn’t used enough imagination in their execution. For those needing a little inspiration I thought I would share some of my favourite summer salads/and cold foods that are in high rotation right now.
Roast Vegetable Salad with Haloumi Cheese

Oh yes: a trip to the fish market, then off to Erbachers and, voila! a gourmet salad for dinner! Until blessed yesterday, with a little breeze and enough cloud to make it coolish! 36C with 90% humidity was like drowning with every breath!
