Sometimes the simplest of ideas are the ones that resonate as being the best. Such is the case with this Japanese inspired salad that I made from Bill Granger’s Simply Asian Cookbook.
Simply make the dressing, cut your cucumber and combine to serve. This recipe generously serves 2 people but can easily be multiplied for a larger salad.
The flavours are fresh and zesty and go really well with fish and chicken.
Cucumber and Sesame Salad
adapted from Bill Granger’s Simply Asian Cookbook
- 1 lebanese cucumber sliced finely
- 1 tbl sp. mirin
- 1 tbl sp. rice vinegar
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
Take all the ingredients and combine. Serve immediately.

Sounds lovely, Leah. Nice and refreshing at this time of the year. Easy too and you don’t need to pickle stuff in large quantities and sterilize jars if you don’t have the time. Which – how is the young master? 🙂
