Hedgehog Divine.
- approx 24 mejool dates, pitted
- 4-5 tbl sp. cacao powder
- 6 tbl sp. coconut cream
- 1 1/2 cups almond meal
- 1 cup walnut pieces
Place the dates, cacao powder and coconut cream into a food processor and blitz until smooth. Add the almond meal and combine well. Finally add in the walnuts and pulse until combined but still keeping the walnuts in bigger pieces.
Line a loaf tin with baking paper and place the mixture into it, pressing it with the back of a large spoon until it is even across the pan. Decorate with 1/2 walnut pieces and place in the freezer for at least 2 hours. Cut into bite sized squares and try very hard not to eat it all in one sitting.

Thank you. It’s absolutely delicious. I’ve made the rum balls now too and they’re equally as good, no flour, no dairy & no egg. Unfortunately still not FODMAP friendly. Going to have to work on that xx

Possibly, but it is pretty healthy so you don’t need to feel do guilty if you do indulge 🙂
