Mixed Berry Coulis

from: Stephanie Alexanders’Cooks Companion

  • 250g berries
  • juice of 1 lemon
  • 1/2 cup castor sugar
  • 1 tbl sp. brandy or Chambord

Blend all the ingredients in a food processor until shiny and the sugar crystals have dissolved.  Press through a course sieve to extract the seeds and serve.
