White Christmas
adapted from Please Pass The Recipe’s Refashioned White Christmas
- 1 cup desiccated coconut
- 1 cup rice bubbles
- 1 cup dried cranberries
- 1 cup shelled pistachio nuts
- 400g white cooking chocolate
- zest of 1 orange
Melt the chocolate over a water bath. Take care not to stir too much just move the chocolate enough to know its melted. Add all the ingredients and combine well. Place in a lined brownie tin and put into the fridge for about 1 hour to set. Cut into cubes and serve. Will keep in the fridge for a few weeks in well sealed container.
