Pancakes

(recipe adapted from taste.com.au)

  • 1 1/2 cups milk
  • 1 egg
  • 2 cups plain flour
  • 4 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/3 cup castor sugar
  • pinch of salt
  • 25g butter, plus some extra for cooking.

Sift your dry ingredients together.  Add in your milk and egg and combine until a smooth batter.  Add in 25g of melted butter and mix.  Allow the batter to rest for at least 30 minutes but better an hour if you can wait that long.

To cook, heat a pan over a moderate heat.  Brush the surface with butter. Spoon the pancake batter onto your pan allowing plenty of space for them to spread.  When you start to see bubbles on the surface its time to flip and cook the other side.  The second side of the pancake won’t take as long to cook.

Serve with your favourite topping.
