Ginger Nut Biscuits

Healthy Ginger Biscuits

  • 1 cup raw macadamia or cashew nuts
  • 1 cup mejool dates, pitted
  • 1 tbl sp. dried & ground ginger
  • 2 tbl sp. flax seed meal
  • 1 tbl sp. lemon zest (approx 1 lemon)

Pre-heat your oven to 180c

Place all your ingredients into a food processor and blitz until well combined and your nuts are cut into quite fine pieces.  I would actually suggest blitzing your nuts first before adding everything else in.

Roll the mixture into walnut sized pieces and place on a baking tray.  Flattten with the base of a spoon or your palm and then bake for approx 10 minutes.  Keep an eye on them in the oven too, as you can see they go brown very quickly.

Should make approx 20 biscuits.
