For me, fish always seems like a treat, probably because I always think its so expensive. The reality is that most meat is expensive these days, and with the health benefits of fish, and how much I love to eat it, I really should have it on the menu more. In spite of this logic, things like smoked trout only come out on special occassions, or in this case when I manage to find some on sale. Turned into a wonderful Sunday afternoon treat with a glass of wine just chilling out.
Smoked Trout Dip
- 150g smoked trout
- 150g cream cheese
- 1 spring onion finely sliced
- 1 dessert spoon finely chopped dill tips
- juice 1/2 lemon
- salt and pepper to taste
Place all your ingredients in a bowl and blend together until well combined. Goes well with rice crackers, celery or fresh french bread. Will keep for 1-2 days in the fridge.
