Coconut Rough

Coconut rough happens to be one of my all time favourite chocolate treats. I love the crunchy coconut and the creamy chocolate combined together, in fact I find it highly addictive and morish.  Now imagine being told you could make a vegan, dairy free, wheat-free version of this treat.  I’m about to break this news to you, and say that it is a seriously amazing recipe worth running to the nearest store to get the ingredients if you don’t already have them in your kitchen.  I’m already percolating versions in my brain for christmas as I think this idea would work perfectly for gluten-free rumballs….stay tuned for the results of that experiment.

The other amazing thing about this recipe is that it has only 4 ingredients, takes approx 5 minutes to make plus some freezer time and is practically foolproof.  Can you see the smile on my face as I write this?  Yup even just thinking about it after I’ve tasted it is making my taste buds sing in remembrance.
